For its ecology and beauty the Aceniche Valley is a declared area of scenic interest. The winery is centered in the vineyards that spread out between the mountains. It’s a functional building that blends perfectly with the picturesque surroundings that were designed with the objective of producing wines of great quality. Everything is laid out with this objective. The differing levels of the areas of reception and elaboration virtually allow the handpicked harvests to travel by gravity to the selection benches where the grapes are sorted with great care. Fermentation is done in 5,000kg. and 10,000kg. stainless steel tanks, with strict temperatures controls being overseen by our enologist. Our nurtured ageing of barreled and bottled wines is done in a subterranean wine cellar where the relative temperature and humidity is ideal. Partal is rested in barrels of the finest French Allier oak, and 37 Barricas lies in barrels of American and French oak. |
